Baked Chorizo Scotch Eggs

Prep time: 5 minutes | Cook time: 15 to 20 minutes | Makes 4 eggs
1 pound (454 g) Mexican chorizo or other seasoned sausage meat
4 soft-boiled eggs plus 1 raw egg
1 tablespoon water
½ cup all-purpose flour
1 cup panko bread crumbs
Cooking spray

  1. Divide the chorizo into 4 equal portions. Flatten each portion into a disc. Place a
    soft-boiled egg in the center of each disc. Wrap the chorizo around the egg,
    encasing it completely. Place the encased eggs on a plate and chill for at least 30
    minutes.
  2. Set the temperature of the air fryer oven to 360ºF (182ºC). Press Start to begin
    preheating.
  3. Beat the raw egg with 1 tablespoon of water. Place the flour on a small plate and
    the panko on a second plate. Working with 1 egg at a time, roll the encased egg
    in the flour, then dip it in the egg mixture. Dredge the egg in the panko and place
    on a plate. Repeat with the remaining eggs.
  4. Spray the eggs with oil and place in the air fryer oven perforated pan. Bake for 10
    minutes. Turn and bake for an additional 5 to 10 minutes, or until browned and
    crisp on all sides.
  5. Serve immediately.
