1 pound (454 g) Mexican chorizo or other seasoned sausage meat
4 soft-boiled eggs plus 1 raw egg
1 tablespoon water
½ cup all-purpose flour
1 cup panko bread crumbs
- Divide the chorizo into 4 equal portions. Flatten each portion into a disc. Place a
soft-boiled egg in the center of each disc. Wrap the chorizo around the egg,
encasing it completely. Place the encased eggs on a plate and chill for at least 30
- Set the temperature of the air fryer oven to 360ºF (182ºC). Press Start to begin
- Beat the raw egg with 1 tablespoon of water. Place the flour on a small plate and
the panko on a second plate. Working with 1 egg at a time, roll the encased egg
in the flour, then dip it in the egg mixture. Dredge the egg in the panko and place
on a plate. Repeat with the remaining eggs.
- Spray the eggs with oil and place in the air fryer oven perforated pan. Bake for 10
minutes. Turn and bake for an additional 5 to 10 minutes, or until browned and
crisp on all sides.
- Serve immediately.
