Baked Halloumi with Greek Salsa

Salsa:
1 small shallot, finely diced
3 garlic cloves, minced
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1 teaspoon freshly cracked black pepper
Pinch of kosher salt
½ cup finely diced English cucumber
1 plum tomato, deseeded and finely diced
2 teaspoons chopped fresh parsley
1 teaspoon snipped fresh dill
1 teaspoon snipped fresh oregano
Cheese:
8 ounces (227 g) Halloumi cheese, sliced into ½-inch-thick pieces
1 tablespoon extra-virgin olive oil

  1. Set the temperature of the air fryer oven to 375ºF (191ºC). Press Start to begin
    preheating.
  2. For the salsa: Combine the shallot, garlic, lemon juice, olive oil, pepper, and salt
    in a medium bowl. Add the cucumber, tomato, parsley, dill, and oregano. Toss
    gently to combine; set aside.
  3. For the cheese: Place the cheese slices in a medium bowl. Drizzle with the olive
    oil. Toss gently to coat. Arrange the cheese in a single layer in the air fryer oven
    perforated pan. Bake for 6 minutes.
  4. Divide the cheese among four serving plates. Top with the salsa and serve
    immediately.
